Havalon barracuta works fine to split the sternum, making it slightly easier to pull the contents out if that is your method. You might break a blade if you twist it but just carry an extra. Let the saw do the work and don’t force it.

I’ve done the gutless method a few times and I still find that gutting the animal first, peeling back the hide on one side, taking off the quarters/meat, then flipping over and repeating is easier. I will do gutless if they die in a difficult spot.
165 gr Norma bondstrike or 155 gr federal terminal ascent. I killed a Wyoming whitetail two years ago at close range still hunting with 168 gr Berger hybrid hunter. I prefer a bonded bullet though.
Go peep. I prefer it on my Lyman GPR. More instinctive aiming IMO. Accuracy improvement depend on how proficient the shooter is with open sights but I noticed better consistency/accuracy.
