If you need a good butchering knife and don’t want to wait for the BM, don’t overlook the Victorinox Semi Stiff Boning Knife. Feels good in the hand, holds an edge well, easy to sharpen, and a good bargain for $32 on Amazon.

Don’t get me wrong the BM looks sweet and i’d like to try one myself but the Victorinox hasn’t let me down yet so no need to change.

Thanks, coincidentally my wife just saw a review of 10 paring knives on her cooking site and the Vic was rated #1. She bought a few for less than $10.

Love my Victornix. Where did she get them for less than 10 bucks?!
 
I recently got the meat crafter off of the meateater website. You WILL NOT be disappointed. It’s stays sharp on a couple deer from skinning to freezer before sharpening again . And it’s by far the easiest to sharpen with a few swipes on my steel rod and it’s razor sharp. Pricey but you’ll only buy once and cry once with this knife.
 
I have not used a Meatcrafter, but really thought I wanted one. Watched and read a lot of reviews which were mixed. Checked it out in person, but couldn’t bring myself to drop that coin on what really appeared to be a stiff filet knife made with good, but not top end, steel. As I have not used one, I’m not knocking them in use whatsoever. However, I found that Victorinox semi-stiff boning knife for under $20 on Amazon and picked up a couple. I will be shocked if that knife doesn’t do the same job quite well. So far have been super impressed with the Fibrox paring knife, and their bread knife is the bomb. Again, not knocking the Meatcrafter, but for that purpose you have options. Downside on the Victorinox is that you may not get to “knife” when describing something as a “semi-stiff boning…” to your wife. 😏
 
The juice is worth the squeeze on the meat crafter. Processed a couple deer with mine this year and have yet to sharpen it. The size is perfect- I love mine
 
I’ve had the Vic for a few years and have the meatcrafter also. The BM is REALLY nice, but it is $$$ better? Absolutely not, but it’s really nice . You def don’t need it, but If you’ve got extra cash to blow….
