Whitetail Deer Meat Yields

Some bone in cuts?
Yeah — should have been more clear. Front and rear legs, shanks, neck, and ribs were all bone in. I’ll either defrost and breakdown the legs into roasts and steaks later or just do a bone-in leg for a party and then use the leftovers for sandwiches or stews.

All other bones are saved and used for stock (and are included in that total). These are beautiful animals — and with all the time I spend hunting them, I want to use as much of them as I can.
