I butcher myself, lightly trim silver skin and keep all bones. Here’s my last buck of the year, which was a monster, my best guess 250# live.

Yeah — should have been more clear. Front and rear legs, shanks, neck, and ribs were all bone in. I’ll either defrost and breakdown the legs into roasts and steaks later or just do a bone-in leg for a party and then use the leftovers for sandwiches or stews.Some bone in cuts?
