This last year I cooked up some moose, elk, and bighorn sheep the same way and did a blind taste test for myself. There were some minor nuances but overall there really wasn't much difference to me. My family concurred.
Reverse seared antelope backstrap is great.
Elk steak cooked medium rare is great.
Elk burgers are pretty awesome.
Wild turkey bacon burger is really hard to beat on the smoker.
Moose in any form is great if prepared well.
Teal are fantastic and dove poppers are a unique treat.
Pineapple Habanero Goose jerky never lasts long in my family.
My family still loves to eat whitetail even though we have eaten over 100 of them.
I even really like high country mule deer in several dishes.
Really hard to choose but if I had to pick a wild game meal for tonight it would be...
Slow roasted blue grouse with parmesan crust baked walleye and a couple of solid side dishes. That meal ranks up there.
What is the best? For my family that answer changes weekly.
So far, nothing beats acorn fed Appalachian Whitetail.
Havent had a lot of western stuff, but have had Gemsbok. Not bad, just kind of bland.
Hope to try Elk, Nilgai, Axis, Antelope, Bear before this game is over.
