What camera for a wilderness elk hunt?

I am going on a wilderness elk hunt next year. What camera or cameras would be good to take along to record the experience. I know very little about cameras but one thought I did have was some sort of unit like a GoPro to remain hands free because we will be on horseback a lot of the time. However, as I understand it, they are only good for close range. Any suggestions would be welcomed. Thanks.

I would just like to have some decent pics and maybe a little video for my friends and family back home. I am not wanting to make a fancy edited production or anything.

Besides my phone, I carry a small Canon 100 I think it is. Fits in a pocket and has a wrist loop. I've used it many times horseback and it's easy, but recommend using the wrist strap to keep it from falling.

The problem with a phone is when you get a nice picture you are limited how big a print you can make without it losing clarity

Canon 360HS is a great camera. Can fit in your pocket has a great zoom and you can make pictures up to 16x20 that look great

Olympus tough line of cameras is dust, shockproof and waterproof. TG 6 or something like that is most current.
