Venison stuffed peppers

So, I love stuffed peppers.
I wanted to stuff some nice banana peppers tonight, throw them in the crock pot overnight, and take em for lunch.
Any good recipes for making the venison stuffing??

I use a meat ball recipe. Not sure I'd leave them in a crock pot all night?

Caribou chorizo stuffed peppers. I already have the caribou chorizo, so its about an instant meal. takes longer to thaw the meat tube than it does to cook.

I like to use a regular meatball recipe. I put venison, break crumbs, Parmesan cheese, parsley, egg, and garlic in a bowl. Mix it up then stuff italian peppers. Put in a pyrex dish, drizzle with olive oil and place in the oven for about 20-25 minutes to brown with a piece of tin foil. Add tomato sauce if you wish on top
