Could you run two cots in the cimarron?

That is an excellent question. I assume you mean the typical cot like the ones people get from a army surplus? A lot would depend on the dimensions/height of the cot and how high you had the Cimarron pitched. In my photos above, if you rotated the sleeping arrangements 90 degrees so there was a cot inside each door next to the pole, I think it might be possible. I don't know if you could do it with the stove but maybe. The only cot I have is a Cabela's XL sized one so that may not give the best example. My buddy might have some of the smaller cots so I'll see if maybe I can do a test. After all, it's supposed to be 70 here later this week. Granted, that's after it was 13* yesterday *shakes head*

I'd imagine that regular cots may be a bit tall, but sense they are all off the ground, you could probably get away with being closer to the stove, as there would be no fear of burning.

are the nests in the cimarron pics from SO?

The nest in my pics is from BearPaw. I don't know what it weighs off hand. If weight is really a concern, look at bivies. If you want some room to move and still protection from bugs, a small 2P nest is really nice.

The nest is actually bbrown's that I have "borrowed" for an extended period. So, I can't speak to exactly what it is. From memory, I believe it is like 80-88" long and 48" or so wide. It's cozy for my girlfriend and I, pretty tight for two dudes even sleeping head to foot. I'd also suggest the T zipper option. This one has the zipper that goes from one corner, up to the peak and down to the other corner. It works alright but a T would work better.
