I have the Fanatic bibs and jacket... wouldn't mind adding a vest but unsure of which size to go with.

I normally wear a Large. I would use the vest as a layer underneath the Large Fanatic jacket.

Will the medium be too small, or just right?

Depends on how big you are what you are layering under it. I would check sitkas sizing chart for the vest and go from there.
