I've really only had one "good" experience with mule deer taste, so not really a fan in general. But most all of my deer were also shot in late seasons. This is also coming from a guy that much prefers marbled beef even to elk.......and we eat a lot of elk. My elk goes mostly to burger, so don't really need any deer meat.......ground or otherwise. That's probably one reason why I have 18 deer points sitting on the books. It would have to be a pretty darn good buck at this point for me to shoot him.Have you had a bad experience with a deer or two or tried and true, just don’t like it?

My wife's first experience with mule deer was not good. Gamey af young Southeast NM buck that had been browsing on creosote bush. That thing was rank. When I told her I wanted to hunt mule deer again a few years ago, she said "uh, you'll have to eat him yourself then." LOL But when I took my first CO buck (at about 9k feet in the aspen/sage) it tasted great and she agreed. Couldn't tell it apart from the SE Texas whitetails we have raised a family on. Same thing with last year's CO buck - tasted great. So I wonder if that first buck was a fluke or those high desert New Mexico muleys just have a gamey flavor.Have you had a bad experience with a deer or two or tried and true, just don’t like it?
I have a hard time telling the difference in the blind taste tests I’ve done with my wife. Especially ground meat.
My buddy gave me a shoulder off the elk I guided him to a few years ago and my wife and I both agreed we preferred deer over elk. That elk was the most bland meat I've ever tasted. Almost no taste to it at all.One year I killed a late rifle cow and a buck muley early in archery. Everyone that ate both preferred the deer.
I can't imagine being able to tell which was what when it's ground, especially covered in taco seasoning.
