Processing knives

I use Victorinox for processing. Several curved boning knives. I also have a sheep skinner , a paring and a breaking knife. I have other styles and sizes I have acquired over the years but those I use on about every deer I process. I just wasted money on the other ones. I been using them for at least 15 years. Easy to keep sharp. I keep them in a knife roll in my kill box as they didn’t come with any sheaths.
 
i like your choice but i prefer the lambskinner on the blade design but it is of course a user decision but on moose caribou and bears can t find better, on bison not decided yet ...

I've heard that recommendation before, so I might be picking one up. What is it about the shape of the lambskinner blade that you're finding better?

my choice is the last one in yellow handle. as you can see it is less curved but your hands will tell you which one works for you.



 
Have any of you guys tried a custom boning knife in a high edge retention steel?

If so, did it hold an edge significantly longer than a Victorinox?
