I think this is a pretty good idea. Great way to be able to grill trout while backpacking.

Does anyone know if there are toxicity concerns with the copper tubing over fire?

Copper is good to go. They've been making copper cookware and using copper tubing for plumbing applications for decades.

Ive also seen these made with Ti bike spokes and alum arrow shafts for the ends. I'm not sure about the aluminum shafts and the food safety factor.

I've been carrying a Coogin's grillin' fork, cost 3 bucks and works fine.

I made one years ago- used a section of aluminum arrow shaft, a piece of aluminum tubing that slides inside the shaft and cut down titanium bicycle spikes for the cross pieces, which also fit into the aluminum tubes- weighs an ounce :)
