Made these for a get together yesterday and they were a hit. Thought you guys might like to give them a try as well.

Pig Shots

1 Smoked sausage/Kielbasa of your choice. I chose a mild sausage due to children eating these.

1lb thick cut bacon cut in half

1 package softened cream cheese

1 cup sour cream

8oz shredded cheddar cheese

2tsp pork rub, your choice.

Pickled jalapeños

Toothpicks



Cut the sausage into 1/2 inch pieces. Wrap each piece with a half slice of bacon forming a cup, secure with a toothpick. Mix together the softened cream cheese, sour cream, cheddar cheese, and rub. Place mixture in a ziplock bag and cut a corner out of the bag to use as a flute for stuffing the “pig shots”. Top each with a pickled jalapeño. Place in your smoker for 45 minutes at 350* and then another 15 minutes in the oven at 350* to firm up the bacon. If you don’t have a smoker than just put them in the oven on a broiler pan so that fat drains off. May have to adjust your time if using the oven only.
 
Try chopping up some red bell pepper really fine and adding that into the cream cheese mix.
 
Sounds kinda delicate and intricate to do ? But sounds great to eat !!!!!
