Took a time-lapse of the sun setting last night. Unfortunately I can't figure out how to share the video, but here's a frame I pulled. Too bad its low resolution.
I got the idea from a Japanese dish called Hamachi Kama. Hamachi is what we call Yellowtail and "Kama" refers to the collar portion. They roast it. These are smoked. 4 : 1 Brown Sugar and Pickling Salt rubbed, air dried and then smoked. The best Shake Kama is Yukon King *WOW* but hard to get ahold of these days.
