I did a similar setup but will be changing it to a single post in the center as the lateral strap bars are causing excess aging of the foam in the straps. Not a sexy looking but should hell the life of my shoulder straps.

Were you storing your packs loaded or empty for the aging/compression to happen?

I like it. Mine usually goes in a tub, but this way I could show them off more.

Mostly empty, just had my basic pullouts in it like first air, water, kill kit. Actually switched to single posts thins weekend but might find a nicer post to use.

Pack manufacturers sew a hanging loop on their packs. Is there any benefit to hanging the pack using the loop vs using the shoulder straps?

Loop is best. Straps cause the foam padding to prematurely wear out

True. Could easily make that an elbow with a cap to make a pretty large hook for the pack, bow, anything.
