I have been twice. George's list is a good one. It is hard to expand on without knowing are you lodge based or fly-in? What are the accommodations? As for boots I used Alpha Burly's both hunts. Never wished I'd have anything else. Boots with gators will likely just give you soaked boots for a week. Also have a day pack big enough for puffy, rain gear, tripod, spotting scope, kill kit, head lamps, crocks (stream/river crossing), hiking poles, lunch, snacks, water. I used a Kuiu Pro 3,600. A bino chest harness is helpful as well. A lightweight waterproof bivy tarp wouldn't be a bad idea. The last time I went we killed late in the day and ended spending the night out in the field (although that was the first time my guide had ever done that with a hunter, so it's probably a rare occurrence). I would add adult wipes. Chances are even if you are fly in (although from the outfitters facebook page it doesn't look like you are fly-in) there will be a generator in camp. If not bring a solar charging unit designed for the back country. Also if you are remote fly in an InReach is handy to have. There is literally nothing in the interior of Newfoundland.
For reference this was the last camp I stayed in on my last fly-in hunt
