I am looking for a new muzzleloader to use in California and Colorado for deer and elk. I am looking for any experienced muzzleloader users to provide assistance. Looking at CVA or Knight.

My vote is knight. I like all my knight muzzleloaders a lot. My family has moved to using all knights as well.

Knight Ultralite is a good start, that's what I went with, but it is not really adequate out of the box IMO. There are lots of other good options too, it's not like it's in a class of its own. It just gets recommended here a lot for whatever reason. I guess because it's light. You're going to need new sights and a new breach plug at the least. Lots of info in the ML forum, as others have said. Sabot Loader and many others have tons of good contributions you can read through to learn. Seems to me like bullet choice, cleaning, and your shot to shot setup decisions are far more important than any particular model you end up buying.
