correct me if I am wrong. is the only difference in the Universal and International stoves is the Universal can be ran off a Butane canister where as the International can not?

i'm 99% sure that is the only difference. I went with the universal for this reason; even though I have a jet boil as well. it was on sale so why not

Yea I think so. you can get all the parts after market anyway so its easy to adapt them to how you want.
I must have the universal, have run it on gas cans, petrol(gasoline), white gas/Coleman fuel and kerosene. pretty simple to swap nozzles out and run what you want. pretty bomb proof cookers
