Mecham Outfitters in Southern Utah. I'm not sure they offer lodging but Hunter is a good guy and is a true old school houndsman. Dry ground and mule specialist.
A friend of mine does hunts here in Colorado but he doesn't offer lodging, an AirBnB would easy to come by.

Yes, in both cases it will depend on the hunter's level of fitness. Both only kill big toms, no immature cats or females. Mechams will hunt dry ground at any time, here it's generally when good storm systems come through.
