What layers did you try? Wet or dry climate? What type of hunting (mobile/moving vs stand hunting). If mobile, ditch any "soft shells", they are heavy, aren't fully water proof and are really or niche in my opinion. Layer: Wicking/poly layer, merino, puffy and then rain jacket (for wind or rain). Can add a thicker "thermal weight poly" over the merino, which will be warm, but still light weight to pack around...if you are deer stand hunting, then maybe you can make a soft shell work for wind blocking quality (more quiet than puffy). If stand hunting keep the legs warm. Can run light puffy pants amd then put fleece/wool layer over top to quiet down the rustle. Good wool hat and neck gaitor, tons of heat lost from neck/head. If your getting cold there may be a perspiration/sweating problem where getting too sweated up. If going into deer stand I wear minimal clothes so I am cool while hiking, then layer up to trap heat once you get to stand.
