Maybe I missed it but it seems like there should be a Knife sub-forum here. Are edged tools usually discussed in the General Gear section?

Yes, knives fall under gear. As a knife lover and collector I wouldn't argue with a dedicated knife subforum, but I don't think there's enough discussion about them here to warrant it. There's a fairly active thread for pics/discussion of custom knives. Someone occasionally posts asking for recommendations about kitchen knives or how to blow a gift card on a new EDC. Sometimes people post when a popular manufacturer releases a new model. Sometimes the replaceable blade vs. sharpening in the field discussion gets fired up.

Someone could start a "general knife discussion" thread in the gear forum if they were so inclined where people could post pictures, discuss the latest and greatest designs and steels and other materials, up-and-coming companies, etc.
