Just had moose burger for the first time…

After 25 years of western and midwest hunting, I’ve been fortunate to have killed and eaten a combo of about 30 elk, mule deer and whitetail…
I was absolutely blown away tonight, by how much better moose was in comparison.
Not even a hint of that venison after flavor.
I’d compare moose to bison.
Guess it’s time to step up my effort to finally draw a CO moose tag.
I've been unsuccessful 25 times in my attempt to draw a Colorado Bull Moose. I'm about to give that up and just draw a Cow Moose.
 
My guess is that moose meat flavor may change depending upon what they eat.

I shot an old timberline moose this year in Colorado. The bulls I watched all summer were in the lushest vegetation available on the mountain. I thought my bull would be tough but was amazed when it wasn't. I shot another mature bull moose in the Bighorns in Wyo that wasn't quite as good but was still great eating. The alpine Colo bull was extremely mild tasting. The burger, steaks, jerky, stix, summer sausage, bratwurst, and breakfast sausage all turned out excellent. I had pork added to the burger.

One thing I noticed about this particular bull is that it cooks fairly quickly. I have to be fairly careful not to cook it too long to keep it moist (including burger).
 
I can’t tell the difference between moose, deer and elk. Antelope is about the only one I can differentiate.
Thats a shocking statement to me. I've shot mountain mule deer that were literally inedible....I had to feed it to my dog. Moose has almost zero wild taste....very mild.

Fun fact; Moose meat has almost zero cholesterol
 
You don't know what you are saying, you really think some California "outdoorsman" is gonna beat a redneck at cooking?

You probably don't even know smoked meat, you think its high or something.
Listen here, mutton man, anybody that has to smoke their meat so it tastes like wood just made my point. I bet you like the taste of wood.
 
My 2023 archery bull was tooth aged at 9.5 years old. That was the only animal that I've ever eaten that even the backstaps were nasty. I ground the rest of that bull and it was great as ground but the straps had a bizzare nasty flavor to them.
I had a bull a few years ago like that. I originally saved the backstraps whole and ground everything else. But after trying the backstraps, I ground them too. They were tough and gamey.......just like the rest of the meat. I was a little surprised because it was a quick kill, quick breakdown, and quickly on ice. The taxidermist said he must have had a real attitude as he found bruising all under the hide around his head, and he did come in hot when I shot him.

A couple years ago I did a blind taste test with my family between moose, elk, and sheep. The sheep was easy to pick out (and everyone's least favorite), but nobody could tell the difference between the moose and elk. But after eating a LOT of moose and elk the last few years, personally I think I like elk better. Mule deer aren't even worthy to be in the same discussion.
 
I will take a fat mallard over any other game meat but most of the issue is people are poor cooks and blame it on the meat
I’ve never had a duck that didn’t taste like duck, no matter how it is prepared. And I am plenty capable of cooking game meat that tastes good. Some species are better than others no doubt, but duck is about the bottom of the list for me when it comes to eating game meat. I’d rather eat raccoon than duck, but they are definitely fun to hunt
 
There’s a reason there were market hunters for ducks and not elk or antelope and I would take antelope over elk. There’s a reason people like pheasants they are like chicken bland and boring
Ummm… didn’t market hunters hunt elk to extinction in the eastern US? There were market hunters for ducks because there was nothing left but some nasty old ducks. 😜

Next you’ll tell me snow goose tastes good.

Some species are better than others no doubt, but duck is about the bottom of the list for me when it comes to eating game meat. I’d rather eat raccoon than duck, but they are definitely fun to hunt

It’s supposed to taste like duck that rich bold flavor is what makes it great when cooked properly not like liver. A properly cooked breast fat on with a nice black berry reduction is about as good as it gets . If I want bland and boring I will go shoot some pheasants or buy a chicken breast. I don’t want my wild game to taste like beef if I want a ribeye I will go buy one. Both are good in there own way.
 
Why wouldn’t they eat the same thing as mallards do in the corn field.

Different strokes for different folks. You’re like the skinny guy that loves fat girls! I can’t knock it, at least you’re eating those sky rats! Better than the guys that kill them and leave them in the freezer until they have an excuse to toss them!

Lot of the animals in the east and mid west were killed off not for food, but to eliminate competition for domestic animals.


Early market hunting of moose and elk was more a thing in the western states to feed the influx of miners.

Then the market hunting in the east of waterfowl to supply high end restaurants in the city's, cause it tasted so good. Poor peasants ate those animals with hooves.
