I've been getting into kitchen knives.

I went blissfully on in the kitchen with a vanilla Wustof Classic chef knife. For years! Then along came a vintage high carbon steel Gustav Emil from France. Then I found a vintage sabatier from France. Researching my new (old) knives I just stumbled on a world of Japanese knives. Oh-0!

Anyone else a tool freak in the kitchen? This is the Gustav on a deer rump chunk.

I have wanted to invest in quality kitchen knives for some time BUT my current setup is an embarrassment. I keep all my broadheads and hunting knives razor sharp and even help others with touch ups but my lord my kitchen knives are total garbage and very dull. I need to fix this.
 
A couple of years ago I decided that it was a shame that I had first class hunting knives and my Kitchen looked like a blue light special !!! at last came the Shun Premier 8" Chef's knife and matching paring knife.......

A: My life in the kitchen has forever changed and I can " Fake it till I make it " To everyone while searing a backstrap.

B: I get complements from global owning metrosexuals and Bay Area foodies while I serve them something they want with all of their pathetic souls to dismiss as dog food as the best thing they have eaten all year.

Vintage Steel ! Now you have my attention. The Butcher shop is open for business :)

I hate garage/yard sales except to look for old knives and books.....picked up a set of six Henckels in wooden block for $10 but not terribly impressed with em.....I've found several old carbon steel knives that I've refurbished and even put new wood scales on and I find myself using those mostly.....good stuff for a dollar!....today's folks tend to put wooden handles knives in the dish washer until they ruin the wood and discard em......
 
Shit. Just when I think this site can't cost me any more money, here comes something else that I now can't live without. Those shun knives look great.
