I'll set the scene:
I have a great 7mm-08 and 300Win Mag both with great glass and both shoot better than moa. I want another rifle, not need, but want. I'd like to have something built...What caliber? I feel 100% confident that my two current calibers will handle any situation I encounter...but I'm a gun guy and like to tinker.
Please, no 6.5 CM...Im hard headed and just can't....and besides a 7mm-08 dominates it anyway haha
 
Get a 22 ARC or a .223 AI - depending on your desire and aptitude with reloading.

If you enjoy self flagellation, grab a .375 Ruger... or a .35 Whelen or .35 Norma Mag if that seems a little too over the top.
 
I agree, you have solid coverage with those 2, love my 7-08!

But that’s not why we’re here…. Are you thinking go bigger or something to shoot targets with?
 
How bout a falling block single shot 45-90 with sweet long range tang iron sights, octagonal barrel, lustrous wood and a skeleton butt plate?
 
I'm in for the 6mm ARC, seems like a good shooter. You have the 7mm covered as well as the 30 cal.
 
A fun, low cost, super accurate bull barrel source can be retired short range benchrest barrels. If your action shared the same thread as a common custom action, $100-$200 barrels chambered in a variety of cartridges, but usually 6ppc (same case head as ARC cartridges) that were retired because they no longer shoot .1 or .2 moa come up for sale regularly. These usually have slow twists for fairly light bullets and tight chambers with turned necks. Of course a lot of barrels are passed along with no prior history and it might be lightly used fresh off the lathe because grandpa died, or completely shot out because a varmint hunter or high volume field shooter put 10,000 rounds through it.

This is my first 6ppc barrel and it looks really fresh on the inside so I’m excited to see what it will do as a varmint/plinking barrel. With shipping it was $60 and was retired because the shooter upgraded to a different action, not because it wasn’t shooting really good. 6ppc has dominated short range benchrest for a long time and in that regard it’s cool that it’s the most accurate cartridge ever for 300 yards and under.

Having said that a custom chambered .222 or 22ppc is said to be as good or better closer in.

Lots of questions left unanswered. Do you plan to reload or shoot factories? The factory 103’s out of a 6 creed shoot very fine. If you reload and like to play the 6 UM or 6 Primal have been catching my eye.
 
A 223 variant or 6creed, but the 6 creed would probably make the 08 less valuable to you

Hard to argue against a 22cal variant with your current lineup
