Wanting to try to do osso bucco with some mule deer shanks. I know the recipes call for a long slow simmer but i am wondering if it could be done in our new instant pot and save hours. Anybody have any ideas?

Funny timing... i have 2 shanks in the pot right now i am about to take out for tacos. First time trying the shanks in the instant pot but i have done 2 different bone in leg roasts that turned out great so far

Turned out great! I think i could have cooked it a little longer to cook some fat out but it was delicious. I used one of Hank Shaw’s recipes i found online. He used a croc pot though

My opinion: cooking in instant pot compared to cooking in traditional slow cooker is equivalent to pellet grill vs coal. It's NOT BAD, but it's NOT AS GOOD. To me, it just has some kind of pseudo-flavor; like I can tell that I cheated a little. It may be mental, but it's still there.

I had laid out a few packages of elk round steaks to make some dehydrated meals for Alaska. Last night the girlfriend cooked them in the insta-pot for about 30 minutes, and they were almost TOO tender. I sliced them thin and tossed them into the skillet for a pepper steak stir fry. Turned out great. I'm going to dehydrate a couple of meals tonight and get them vacuum-sealed.

My girlfriend uses the insta pot a lot and it seems to do a great job and quicker. I think it's cheating, as i'd rather spend time over the grill with a cold beer in hand....but it's nice for a quick evening meal!

I freaking love my instant pot. Just don't overcook your meat, or it will be too soft, like another poster mentioned. It is better to shoot for less cooking time if you aren't sure. You can always do a quick pressure release, check on it, then turn it back on if you need to. It is still faster than slow cooking. Don't forget to brown your meat with the sauté function before you pressure it. It adds tons of flavor.

I've had it come out both ways, some were not quite as good but once I got the hang of it most turn out even better than a real slow cooker.

With that said none of it comes out quite as good as a legit braise in the oven for whatever reaason

I agree with this. Love my instant pot, but there’s something too the slow cooker and the aroma in the house all day.

That said, being able to enjoy a stew under two hours after you get back from the store is amazing! Love the instant pot, but happy to do all day cooks when I have the time.

I'll agree that I feel like I can tell a difference between a slow braise and instapot. That said I can set the instapot and go to work. Not brave enough to do that in the stove.

The Instant Pot also works well for ribs if you don't have the time to smoke them for hours. Just dry rub them and roll the rack up to fit in the pot, pressure cook for 25 minutes, then crisp them up and the grill. Fall off the bone tender. The instant pot also makes the easiest peeling hardboiled eggs you will ever see.

I do a dozen eggs at a time. Sometimes smoke them afterwards, super delicious.

We recently did a pork shoulder for pulled pork in 45min - almost too tender. It's a huge time saver.

Excellent for the tougher cuts of meat, especially when you don't have the hours to baby sit a slow cooker.

you can use the instant pot as a slow cooker too, so it's a no brainer appliance as it does a bunch of functions. I wish it was around when I was in university...only need an outlet for delicious meals.
