The 12-40x60 strikes a really nice balance between packability and optical clarity. If you are willing to carry more weight, and pay more, the Swarovski spotting scopes are amazing. I also get a discount so it helps a lot.

whatever you do, get a solid tripod and good pan and tilt head for it.
I use a slik carbon fiber tripod with a benro S2 fluid head on it. very smooth and great for controlled search patterns.
