Over the years I have been gifted sets of steak knives and some of pretty high quality but I never took a shine to any of them. I even once had a block of kitchen knives from Henkels that included 6 or 8 steak knives but they did not really speak to me. The Ex now has that block....
Anyway, I learned over time to take a good, stout knife with me when going to a German restaurant when I thought I might be ordering a roasted pork knuckle. It is rare to be given a knife up to cutting the crispy skin so I would just take one of my hunting knives. I like to use traditional knives and over the years have collected a good bunch of the "Nicker Messer" with the round tangs. They are not as strong as the full-tang versions but are made of good steel that holds and edge. There are a lot on the market though that have been abused and the handles have been broken/bent. One day it occurred to me that these knives were perfect for use on the table, each person gets their own unique knife and they are a bit of conversation pieces. When not is use they sit in a drawer in their sheaths protecting the edges unlike the usual steak knife. Down side is the blade do rust, most of mine are over 75 years old with a couple over 120 years. I buy them on ebay.de, gunfinder.de, egun.de and flea markets rarely paying more than $40 equivalent.
