How long will Bacon stay good?

Making my Butthole sandwiches I have individually bagged the Tortilla. Have Justins PB individual packs. I want to cook the bacon up the day before I leave. Will it keep ok if I freeze them up to 8 days? Or am I stretching it? thanks.

James, are you asking if the bacon will keep 8 days unrefrigerated once cooked?
My opinion...YES. It's basically salted jerky once cooked.
But I'm sure that brand matters here... not all brands have the nessessary salt and natural tannins (sp) from smoke cure to properly preserve it. Moisture content also plays a role here, the drier the better. SO I'd probably air dry, then vac bag it, and refrig until I needed it.
