Home made jerky shelf life

Depends on how dry it is, how much salt/sugar you use, fat content, and comfort level. I came across a piece that was at least 2 years old a while back, it had fallen out of sight, unpackaged. It tastes great.

Fat might go rancid, but that will not really hurt you, just smell and taste bad.

Thousands of years old meat has been eaten without issues.

 
I don't even vacuum seal it anymore. I just put it in a quart or gallon freezer bag. We pull out enough for a week at a time and throw it in the refrigerator. It lasts 3-4 months in the freezer or until all of the jerky is gone.
