From what ive tried i like the 143 eldx the best. Also 130 grain berger hybrid otm is good. I would have no issues 140gr eldm and 147 eldm.

+1 for grinding. The heart is high quality meat in my opinion, and if you grind it with 10lb of other meat you will have the same quality of ground venison. Much better option than tossing it. The flavor is comparable to the rest of the deer, but slightly more iron-y.First and foremost, don't overcook it.
Cook slow and moist, in broth or milk.
Or slice thin, marinate, and pan fry.
Or grind and use in sausage/wurst.
