Searched up a recipe that used venison and believe it or not the pint night guys had a good one. I tip my normal brim to them. Super simple recipe too and the tzatziki was killer. I used elk burger.

I do this all the time, love me some gyros. Been working on/tweaking the meat recipe for many years. They're pretty good.

Oh boy, gonna have to try that. Wonder if it's even better with sheep.

Running the meat through the food processor several times seemed to help imulsify it pretty good.
