Freezer to Refrigerator Conversion

Looking for input from those who have experience with DIY coolers. I am wanting to have a cooler that I can fit 2-3 deer worth of quarters at a time. I found a company selling used freezers that gas stations use for bagged ice. Specifically I am looking at the single door models. The idea is to use an ink bird freezer thermostat that can keep the freezer at a temperature I set it at. I would set it at 36 degrees. I would set up some sort of system to hang the deer quarters with, which shouldn't be too complicated. All said and done I would be $550 in total. If the components on the freezer break and it doesn't work whether that be one week in or years down the road, I am thinking I would go the coolbot route with a window AC unit. Unsure of how easy it would be to cut the hole but that is also plan B. Before pulling the trigger on this system has anyone already tried this?

I just take a good sized deep freezer, the modern ones are pretty light and cheap. I run an inverted quiet generator in the daytime if it gets warm. I see your idea about hanging the quarters though maybe a more permanent deal than I use in camp
