I guess to finish, this ended with ~82 lbs of delicious venison in the freezer, and lots of fun in the kitchen. Does anyone else use Hank Shaw's recipes?

I have used Hank Shaw recipes. The venison barbacoa is a really good one ....... it's great for taco or burrito meals. And also, very nice buck!!

Beautiful buck. Heck of a place to start!

Hank Shaw's recipes have literally never disappointed me. His steak Diane recipe is mind blowing, and the barbacoa recipe mentioned earlier is great and super easy. Really, anything of his you have the ingredients for is worth a try.
