Elk ribs

I did this last year. It was cool out so the guts didn't balloon up at all.i use a folding SOG saw. Was not a big deal.

How do you guys cook them? I almost always keep the rib meat...but end up throwing it in the grinder. Would love to cook them whole sometime.

I've smoked, pressure cooked then smoked, baked and BBQ'd them. In my opinion, they're best tossed in the grind pile or left. Good ribs are cheap and elk tallow tastes like bad dry wax.
 
I have a smoker and also recommend the 321 method. I cooked a rack of elk ribs over a campfire last week. They tasted good but the tallow did not cook down enough and was like wax. Or you can cook them in a pressure/slow cooker first.

I always have the thought that I’d like to keep them. Then the Pack out becomes a reality and I just cut off as much meat as I can for the grind pile.
