Elk jerky ideas!

Ok everyone today I whipped up about 7 pounds of jerky, elk jerky. I used a elk liver, off the bull I harvested last September. My question is has anyone ever used a elk liver to make jerky? I have it in a marinade right now for a couple days and used my commercial meat slicer to get good 1/4" pieces so I am actually pretty pumped to do it so ya let me know what your stories are!
 
I love liver and everyone loves jerky. Liver jerky does not sound good at all. Liver isn't meat. Let us know if it is edible.
 
Haha no help at all bar haha b. Roberts I agree my man! I just had this thing frozen and honestly thought it was a roast. Once it was thawed I realized what it was and I've never been once to just throw stuff out and I want to have this jerky ready by next Friday scout trip haha
 
Jerky was awesome! My wife and I ate if on our pack in scout trip. Great bold flavor even better texture!
 
I'm a young gun ha, honestly I not a liver guy at all! My hunting buddy was the one who took the liver and insisted on me keeping it. My plan was to simply toss it out once I wa home. Once I realized it was liver I said what the hell, if it was terrible I would toss it all out anyway. I don't plan on making elk liver jerky a regular thing. But I did make the best of it haha
