How is elk fat compared to deer fat? Waxy and needs to be trimmed or tasty and let it ride?

I don’t know of any species in the deer family that don’t have fat that tastes similar to a ball of wax.

It all depends on what they eat. Good lush grass, corn, beans, wheat, alfalfa, etc. vs desert grass, pinion, juniper, and sage.

This is true. I've had some deer fat from an orchard buck that tasted good.
