Elk boned out weight

My largest Colorado bull yielded just over 250 lbs of meat. I set up a small processing operation next to a cold creek where he fell and spent close to 5 hours breaking him down. He was piled into a huge spruce and carving the quarters off was challenging, even for two men. I really took my time trimming the meat on site before placing it in TAG bags. I had a sheet of Tyvek that I laid out on the ground to do the butchering on, and it was a huge help in keeping the meat clean. I did not take rib meat- it was covered in bees and wasps by the time I dealt with the more premium portions. This weight is de-boned....
