Duck Bombs

I'm currently out hunting ducks at my buddy's camp here in Louisiana...a January tradition for us. The favorite recipe for duck breast has been nicknamed "duck bombs." the recipe is a wild game staple...marinade the duck breasts in whatever you like, slice them into bite sized pieces, add some cheese and jalapeño, then wrap them in bacon!! Throw them on the grill and there you have it. We cooked the tenderloin from my Kansas whitetail as well. Both dishes were fantastic :)

Yum!! We do something similar with ptarmigan and spruce grouse breasts.... Never seem to have enough, They always go quick!

Dave,

It's a mixed bag here. Lots of teal and ringnecks. Quite a few canvasback and Grey duck (gadwall) as well. Even shot a wood duck this time around. Earlier in the season there were more mallard and pintail, but they were gone this weekend.
