cutting shanks for osso bucco....

Having a way to grip the bone/meat is the hardest part of sawing it if you're not using an electric band saw. I use a manual hand saw. I'll cut meat down to the bone with a knife and saw the bone, this year i might work up a vice/clamp to hold the meat in place.
 
I just freeze them and use a Diablo steel demon blade in my Sawzall. Never had any issuses. I also use an electric chainsaw with vegetable oil for quartering.
