Soft canvas panniers or iron cloth. Match weight on your coolers. Get coolers that fit nice and tight in your panniers. Pack them tight with no rattle as others have mentioned. Try to pack them even front to back. If you have heavy fronts or backs, make sure both are going the same way (i.e. heavy fronts on both sides). Use a box hitch or other hitch that "lifts" your loads. Coolers and hard boxes will rub holes in your gear and stock if you don't get them up off the animal. Diamonds actually pull the gear down on them, so avoid those for this application. Everybody has preferences, but I never hitch to anything smooth. Might ride for 5 miles, but eventually that rope moves around if it doesn't have a grip.

Coolers are nice to top pack on, but keep it tight and low. On short stock, it's tough on them if you get much weight up high.

I just manny it up like any other pack, and match it on the other side with a box we built roughly the same size for dry goods.
