Anyone made any new or different wild game Christmas Entree’s this year? Sharing a couple of mine below. I made a venison Wellington that was not bad. Found it difficult to slice into sections that would stay together. The star of the show has been a venison Irish boil, sans potato’s for weight management concerns. Corned meat turned out amazing! You just mix it with cooked cabbage, carrots, and onions. Always looking for new stuff to try so I would like to hear what you all have prepped.

Last year, i did 3 different cured hams (photo in the 'Smoker' thread)
Wild hog with pineapple & paprika,
Venison with Sage, onion & Rosemary &
Honey glazed bear with black pepper & wholegrain mustard.
