Beans in the chili!! If there isn’t beans in there then it’s a stew.

And its gotta be homemade. Preferably with elk, moose, bison, deer or beef. In that order

Three kinds pinto, kidney and black. With wild game I count on the fat in beans… and the couple lbs of bacon and grease.

3 types of onions too.

But man I really want to try either honey or maple that makes sense. And I’ve only used plain hot jalapeƱos, but I think I better try some real chilies.

I’ll need to stew on the cinnamon…

If I'm making stock for chili (I generally make chicken or turkey stock, regardless of the meat I'm using) I'll toss in a few each of Ancho, Guajillo & chile de Arbol to give it a really good base, then blend them into the stock after it's cooked for several hours. That gives a deep, earthy heat. If I want to add a sharper note up front, I use a powder from my own dehydrated Datil peppers. They're habanero hot, so not stupid, but they have an incredible citrus flavor that really adds complexity to the initial taste. I rarely add fresh lumps of pepper to mine, but if I do I'll smoke some red jalapeƱos & add them about a half hour before it's done, so they retain a little bite.
 
What types of onions are you adding here? Caramelized all of them? Just cooking them down with the meat?

White, yellow and red. I try by volume to match the size to the volume of meat. Ie one lb of meat is one very large onion.

After cooking bacon and leaving grease I add all the other meat and raw onions, garlic/pepper/salt and rotel tomatoes and cook it down till meat is brown and onions are just soft. Then beans and my secret liquid. For couple hours.

3 hot sauces, chilie powder, cyan powder, and jalapeƱo go in after a few hours on a low simmer.

Definitely going to try some honey as I think that will compliment.
 
At least we’re all close on what a proper chili is. Have you ever seen people put cottage cheese and green beans on spaghetti?
That's gross.

Not trying to start another topic but... I did order a chicken fried steak with gravy once in the NE and it came out with smothered in stewed green beans and tomatoes as "gravy".
 
A good friend, about a year ago, recommended putting a cinnamon roll in the bowl first, and then covering in chili. Haven’t had chili any other way since that little discovery.

Are you talking about an actual pastry, sweet and covered with frosting and defiling it with chili? I love chili, I love cinnamon rolls but never the 2 shall meet. Further evidence of our devolving as a society.

Got a couple pounds of ground bison meat ready for the chili pot. Will be gathering up all the rest of the ingredients soon. I make enough to freeze so that I can have some later.
 
I'm sorry about you Ohio people but cinnamon in chili is F-ing disgusting. And then to pour it over pasta? Gadzooks what a horrible dish. Wouldn't feed it to a dog, even one I didn't like.

They put spaghetti noodles in chili, we can all agree that’s wrong.
