Visited some friends in Colorado I hadn’t seen in a blue moon, wife made us something she called a burrito for breakfast, had eggs,cheese and sausage in a flour tortilla. Told her it was a breakfast taco, told me there was no such thing. She came from the midwest. Senora Lopez at Taqueria Lopez in Raymondville Tx would have been appalled at the appelation and final product.

I'm sorry about you Ohio people but cinnamon in chili is F-ing disgusting. And then to pour it over pasta? Gadzooks what a horrible dish. Wouldn't feed it to a dog, even one I didn't like.

I will eat it either way. I sometimes cook it with no beans and have a pot of pintos if anyone wants beans. One think I always have is corn bread.

Little known fact: There are different kinds of cinnamon. Most people are using Cassia cinnamon as that pretty much what is available at grocery stores. However, Ceylon Cinnamon has a noticeably different flavor profile. Cassia: 95% of its oil contains cinnamonaldehyde Vs. Ceylon at around 50-60%. Cassia cinnamon has a strong, dominate flavor where Ceylon is a much more subtle by comparison, with more of a "woody" flavor. The difference is pretty noticeable. I'd never use Ceylon cinnamon as a dominate flavor in chili, but a hint of it ads richness and depth to the spiciness of chiles.
