Central / Southern Utah wild game processing

I have a cow/spike tag and was hoping to gather a few suggestions for processing assuming I tip one over next week. Hunting Monroe unit so somewhere around Junction, Circleville or Cedar City area while on my way back to Vegas. I don't need the entire thing processed just want some good sausage and other treats made form the lower quality cuts, not thrilled with my local products. THANKS!!

2nd for Nays. I used them for so many deer and elk over the years I hunted that area I got a hat, still use it .
