Canning wild pork

My family enjoys canned meat from the animals we have taken. Canned elk, venison, tuna, turkey, chicken when it is on sale, and other things. We have discussed a winter hog hunt for a family vacation and we're discussing what we would do with the meat. I figured that canned wild hog would be similar texture to pulled pork making it good for a multitude of meal options that you want soft pork in.

Have you ever canned wild pork?

My first thought was trichinosis, but looked it up and says canning should reach high enough temps to kill it in both bear and pig.

You’ve got the right idea.

Canned a couple.

It’s a lot leaner than farm pig. Tastes good but it’s not bacon or a pulled pork with high fat content.

There’s no health concern with wild pig meat if it’s cooked properly, just like any other animal.


Also, congrats on building an awesome family if their idea of winter vacation is a hog hunt.
