I just cook them in a crock pot or pressure cooker, maybe with some pickling spice, and eat them. Throw some onion in too. Best cut of meat on the animal.
I love tongue. I do like stated above. Pressure cook with some broth and add whatever other goodness you are feeling.
Peel the outer layer when done cooking and have at it.
Last tongue I had was from a steer we butchered. I sliced it across the grain, kind of thin, hammered to tenderize Worchester/Soy sauce, some seasonings and pan fried.
I was in a foreign country once (Las Vegas) and the menu was in Spanish. I pointed randomly at the menu to the word "lingua" and asked the server what that was. "Beef" she said, so I ordered it.

You like corn beef, if so you might try it. Many recipes available to do it your self. It’s one of the ways my mom used to make it, and still one of my favorites.
