Makes the best sausage, salami, snack sticks etc. I wung a few roasts last year, I think I rubbed in pappeys then seared in hot oiled pan then crock pot with a beer for a while.

I killed my first bear in August and we have really enjoyed it cooked in the crockpot like shredded beef or pork for tacos or bbq sandwiches.

I smoked a bone in ham from the last bear I killed, it was fantastic. I followed the recipe in Rinella’s book.

We also trim off all the fat. Add 10-20 percent pork fat or shoulder and run it through the grinder. You can use it in any recipe you would use hamburger. My kids love bear buritos!

Corned black bear is my all time favorite way to eat bear.

But like others have said, sausage is a good way too.

Makes great summer sausage but for big muscle groups of meat, try corned bear. The grainy texture of the bear is perfect for corning.

Brats, pepperoni sticks, sausage... it's all good. I have shot one just about every year for the last 5 or 6 years so we always have it around and eat it pretty regularly.
