Any courses or material that really stick out as a must read/see for first time hunters?

Welcome! I obviously don’t know the extent of your hunting career, but there is a great amount of info out there. I would check your local wildlife agency website and consult with them about recommended classes. I don’t know if any but I am sure there are some folks on this site that can steer you in the right direction. Best of luck!

It really depends on what you want from your elk hunting experience. I have a library of good books on elk hunting. Different hunters enjoy different styles of hunting and have different expectations. Some books are just a joy in themselves as the author takes you along on their hunting trip. You can vicariously be a part of their hunt and learn some things at the same time. Other books are more technical and like reading your car owners manual. Some books have both, but focus on one style of hunting.
I used to really enjoy videos from Wilderness Sound and Stoney Wolf, but there were others. The hunters on these hunts had fun and showed you elk hunting. You got the whole hunting experience without someone killing a big bull every three minutes. Sometimes one or more of the hunters went home empty handed. That is part of the experience.
If you want a book that has good stories, personal experiences and gives you information on how to kill elk most effectively, please forgive me for tooting my own horn, but you can get all of that from the book Tree Stand Hunting Rocky Mountain Elk. I will forgive you if you say that is not how you want to hunt elk. Tree stand hunting is effective when done right, but just how exciting it is, is a matter of opinion and personal taste.

Really, this will cover most of what you need. Corey Jacobsen (Elk 101) and Elknut (Paul Medel) pretty much know everything elk.

Randy Newberg for E-scouting and glassing style rifle hunts.

Conversations over beers with some backwoods badasses from NW MT or N. ID if you want to still hunt / track in snow with rifles.

Elk 101 and Newberg are pretty good resources for understanding what makes elk tick in general.

Any gold miner will agree that the most important thing is picking the right spot to start digging. Put as much effort into choosing your spot as you can and you’ll find a nugget or two.

If there are plenty of elk you can make mistakes while learning to hunt them. Hunting where elk are few and far between makes it hard to learn much let alone kill anything.
