I cut up an elk last year with the hidden canyon. It was like butter. Awesome blade. Curves in all the right places.

May I also suggest you consider the Steep country, love that knife, liked the size better than the saddle mountain skinner. Kind of a nice mix between the altitude and something you can hold.
