I'm pretty much barred from hunting out West without my wife so always end up bringing some extra amenities. In the past before we got the super offroad pop-up camper I used a combo of a Cabela's deluxe shower and a portable toilet. Combo worked great. We'll be in a wall tent again this year and do it again assuming the shower is still in good shape (been in garage 5 years) but if not then I like the OP's idea of the pop-up blind. The shower is nice so I can stand up in it to button up and all that, and obviously can also shower in it by just moving the toilet outside.
Before this we'd use a bucket with the toilet seat lid and a bag of cat litter. Layer the litter in the bottom, then after a #2 cover it with a scoop of cat litter and no smell or moisture. When we're done put the lid on the bucket and haul it all the way back to Texas (LOL) to dump in our trash can.
