Based on the question asked for coyote to moose I’d pick the 6.8western or the 280ai.

But if you truely mean a all around deer cartridge I’d be picking the 7mm08.

There are so many to choose from but right now my favorite is the 6.5x55.

I am also a big fan of the 7mm-08. Been hunting with it for over 25 years. Never failed to do the job.

.308, coming from a guy with just a 6.5cm. Local ammo selection is 4x better with .308.

25-06, 270 and .243 are my go to. But I’ve had those forever. And just have confidence. If I was starting from scratch I want a .223, 6mm creed or 6.5creed. Great ammo availability for two of those and the factory ammo offerings will be really hard to beat all around.
